This is my favourite 'smack' n cheese recipe. Mom can't remember where she found it, but we all love it a lot. It's my special lunch that I like to ask for.
2 cups of water
1 cup of milk
bit of butter or oil, whichever you like best
Boil these and add 2 cups of whole wheat macaroni. Make sure it's whole wheat, or it won't be as healthy.
You have to stir it a lot so that it won't stick. Mom uses her pot that doesn't stick. It has to bubble a bit, but not crazy boiling.
While it is cooking, grate 2 cups of cheese. I like the un-coloured medium cheddar from the cheese factory near Grandma's. I don't know if you can get there, it's near Perth and the ice cream store.
Then when almost all of the milk and water are gone and the macaroni is soft, put in the cheese and stir it until it's all melted and saucy. I like to add some parsley and pepper, and Gracie puts in a bit of garlic powder. However you want to eat it, just eat it! It's great! I even have the recipe memorized so that I can always eat it when I want to.
Oh, and do you want to know why I call it 'smack'aroni and cheese? Because it's so good, you smack your lips!

I hope you like it! It's obviously a hit with our kids (and one small boy in particular ;-) No draining pasta, or making separate sauce- easy and delicious!
We will try this one for sure--our squirrelings like whole-wheat macaroni too.
We made this today and it worked very well (the nonstick pot was a good idea, although it wasn't really that messy). Crayons ate a VERY LARGE PLATEFUL and asked for more.
Please tell The Boy that Mama Squirrel does know where the cheese store is, but it would be a very long drive to get there! We settled for the grocery store's Cheddar.
Please tell The Boy that it's a hit at the Judsons. I fixed it yesterday, and got a good batch first time out (beginner's luck, perhaps, but I'm not arguing). Today I used the leftovers as the starter for a microwaved casserole of sorts, and that worked out all right, too.
I love that it only uses one dish during preparation. BTW: I didn't have a nonstick pan, but I had no trouble at all with my stainless steel one.
The Boy says he is very happy that the Squirrels and the Judsons like the macaroni, because he thinks everyone in the world should eat it and love it ;-)
